Beef Stew
This classic beef stew is the ultimate cold-weather comfort food. Place slivered onion in a saucepan or pot with olive oil. Allow to simmer over medium heat until onions begin to brown. Cut stewing beef into preferred bite-size pieces, add to the browned onions, add gravy mix, water, salt and pepper, and two tablespoons cooking wine, and cook for about ten minutes, covered on medium heat. Add vegetables to stewing meat, stirring as you add, and continue to simmer in a covered pot for 20 to 25 minutes, until beef is fully cooked and vegetables are fork tender. Chicken Noodle Soup
Chicken noodle soup is always a fall family favorite. Melt one tablespoon of butter in a large pot over medium heat. Add ½ cup of chopped onion and ½ cup of chopped celery and cook until just tender, about 5 minutes. Add 4 (14.5 ounces) cans of chicken broth, 1 (14.5 ounces) can of vegetable broth, ½ pound chopped cooked chicken, 1 ½ cups of egg noodles,1 cup sliced carrots, ½ teaspoon dried basil, ½ teaspoon dried oregano, and salt and pepper to taste. Stir to combine and bring to a boil. Reduce heat and simmer for 20 minutes.
Italian Wedding Soup
You don’t have to be of Italian descent to make a delicious, cozy Italian wedding soup. Combine ½ pound extra-lean ground beef, one large egg, lightly beaten, two tablespoons dry bread crumbs, one tablespoon grated Parmesan cheese, ½ teaspoon dried basil, and ½ teaspoon onion powder in a bowl and mix. Shape beef mixture into 3/4-inch balls and place on a parchment-lined tray. Heat 5 ¾ cups of chicken broth in a large pot over medium-high heat until boiling. Stir in 2 cups of thinly sliced escarole, 1 cup of uncooked orzo, ⅓ cup of finely chopped carrot, and meatballs, and return to boil. Reduce heat to medium and cook at slow boil, stirring frequently to prevent sticking, until pasta is tender yet firm to the bite, about 10 minutes. Serve hot, garnished with fresh parsley and extra Parmesan cheese.
