Produce on the Grill
By this time of the year, friends and family gather for backyard cookouts. Many turn to barbeque, hamburgers, and hot dogs, but what about bringing fruits and vegetables into the mix of outdoor cooking fun to wow those family and friends? Memorial Day weekend is the perfect time to fire up your grill, and the good news is you can grill almost any kind of produce. You can cook produce directly on a grill surface or in a basket. You can also cook it on heavy-duty aluminum foil or a reusable foil baking pan. Be sure to clean the cooking surface beforehand and coat lightly with oil.
Your get together just got sweet, savory, and spicy!
Sweeten your grilled produce with citrus juice, maple syrup, or honey.
Try savory seasonings like vinegar, herbs, or Carolina-style barbecue sauce on those veggies.
Turn up the heat with chili powder, smoked paprika, red pepper flakes, or a curry blend.
When grilling fruits or veggies, cut them into at least one-half-inch pieces or slices to avoid overcooked, mushy produce. If making kabobs, soak wooden skewers in water before grilling to prevent burning them.
Veggies
The produce section is full of veggies that take on unique flavors after time spent over the flame. Most moisture evaporates from vegetables as they grill, causing the flavor to become more concentrated and the sugars to become more condensed. This lack of water increases the sweetness and taste of the vegetables. Here are a few grill ready veggies:
- Summer Squash (Zucchini or Yellow)
- Asparagus
- Eggplant
- Onions
- Cabbage
- Peppers (Bell or Hot Varieties)
- Corn on the Cob
- Mushrooms
- Potatoes
- Tomatoes
- Asparagus
- Broccoli
- Cauliflower
Grilling fruit works well because it caramelizes the natural sugar and brings out the natural sweetness of the fruit. Fruits require little preparation and can be ready for the grill in no time! Here are a few easy fruits to grill:
- Pineapple
- Peaches
- Avocados
- Apples
- Nectarines
- Plums
- Papaya
Grilled fruit also makes a delicious and low-fat summer dessert. Top with ricotta cheese or drizzle with honey to beat the summer heat! Even try some chili powder on your fruit for a super flavourful combination. Grilled fruit is also great served with a scoop of ice cream or frozen low-fat yogurt.
