Butter Roasted Turkey Breast



Ingredients:
  • Whole bone-in turkey breast, split in half
  • 1/2 cup unsalted butter, room temperature
  • Kosher salt
  • Freshly ground pepper
  • One head garlic, cloves peeled & crushed
  • 6 sprigs thyme
  • 4 sprigs rosemary

Preparation

Pre-heat the oven to 425 degrees. Loosen the skin from the turkey breast and rub the butter under the skin and all over outside of the breast. Season with salt and pepper. Scatter the thyme, rosemary and garlic over a large rimmed baking sheet. Arrange the turkey breast, skin side up, on top. Roast in the oven, turning over half way through until the skin is crisp and golden brown. Meat thermometer should read an internal temperature of 160 degrees to reach optimal moistness, 45 to 55 minutes roasting time. Let the breast rest 10 minutes before carving. Serve with stuffing, cranberry sauce and your favorite sides for a great meal.
